When you're in Nanning it would be a pity not to try the local food specialties: Rice wrapped in lotus leaf (Heye mifan) and Ali dog hotpot (Ali gourou huoguo) are the must in summer and autumn respectively. 夏令佳品當屬鮮蓮冬瓜盅,冬令進補首選“阿里”狗肉。豆蓉糯飯供你“食過早”,吮田螺要去夜市攤?!傲钟杏洝薄ⅰ胺劢峭琛?.....這些不僅僅是馳名的招牌,更是一段歷史的見證。


老友面:

這是有著百年歷史的面食。

據(jù)說,一老翁每天都光顧周記茶館喝茶,有一天因感冒沒有去茶館,周記老板便以精制面條,佐以爆香的蒜末、豆豉、辣椒、酸筍 、牛肉末、胡椒粉等,煮成熱面條一碗,送予這位老友吃。老翁吃后出了一身汗,病狀減輕,故由此而得“老友面”之名。

老友面食之開胃驅(qū)寒,深受食客歡迎而經(jīng)久不衰。


八仙粉:

相傳是清宮食譜之一,因其配有山珍、海味、時鮮八味以上,味道相異相輔,如“八仙過海,各顯神通”,故而得名。八仙粉以鮮滑清爽為特點。


干撈粉:

把米漿蒸熟后切成條形,拌以調(diào)制好的叉燒、肉末、蔥花、炸花生、醬料、香油等即可食用。

特點是香、酸、脆、甜、咸適度,食而不膩。


卷筒粉:

用磨成的民漿放進托盤攤成一張薄餅,撒一些肉末、蔥花在上面,蒸熟后卷成卷即可上碟,佐以醬料、香油等拌以食用。


八寶飯:

將糯米泡濕,拌以食用油、綠豆、百合、蓮子、白果、蜜棗、山黃皮、冬瓜糖等近十種清補原料,蒸熟即成。以其香溢軟滑,甜而不膩著稱。


粥品:

南寧人早餐愛吃粥,粥也有十幾個品種之多,有瘦肉粥、豬紅粥、魚片粥、紅豆粥、皮蛋粥、田雞粥等。特點是香熱鮮美。


酸品:

南寧方言叫“酸野”。南寧有句俗話稱“行人難過酸野攤”,即將“酸野”描述得維妙維俏。制作是采用當?shù)匚锂a(chǎn)木瓜、蘿卜、黃瓜、蓮藕、椰菜、菠蘿等時令果蔬,配以酸醋、辣椒、白糖等腌制而成。吃起來酸、甜、香、辣味味俱到,脆爽可口,生津開胃。
